Friday Pin Up- Snack Cake!

Remember when I gushed about pumpkins last week??? This morning I whipped up another one of our pumpkin favorites. The best thing about this incredibly moist snack cake is that it's so delicious it tastes like you are eating a decadent dessert!  Because of the minimal amount of sugar and use of syrup it's much, much healthier than cake.

Ingredients:

  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin spice
  • pinch of salt
  • 1/4 cup sugar
  • 1/2 cup maple syrup
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut oil (OR 1/4 cup applesauce + 1/4 cup olive oil)
  • 1/4 cup water

Directions:

1. Preheat oven to 350.  Prepare shallow casserole dish with cooking spray. 2.  Mix dry ingredients (excluding sugar!) in a medium bowl.  In larger bowl combine all wet ingredients + sugar.  Stir until combined.  Add the dry ingredients to the wet, stir until further combined.  (Occasionally I'll fold in chocolate chips for the kiddos) 3.  Pour batter into a prepared dish.  Bake for 22-25 minutes or until a toothpick inserted comes out clean and its nice and golden brown on top.
